What is IV's?[]
IVs, or individual values, are randomly generated stats given to a wild Pokémon upon encounter. IVs cannot be influenced by battles like EVs but can be changed for a price of $10,000. When paying to change your Pokémon's IVs it will either make the IVs better, worse or stay the same. The game has made it easy to determine how bad or good your IVs are by using a unique color on the Pokémon's name based on their IVs.
Color order for IVs: Grey (Horrible IVs) - White - Green - Blue - Purple - Gold (Perfect IVs).
What is EV's?[]
EVs, or effort values, are attributes which give bonuses to an individual Pokémon's stats and improve differently depending on which Pokémon they defeat. Each Pokémon has its own EV stat it will give the Pokémon that defeated it in battle. The stat the Pokémon gives is based off what the stat that Pokémon excelled at and how many stat points you get from the Pokémon depends on what level of evolution they are, example Pichu gives +1, Pikachu gives +2, and Raichu gives +3. If you want to reset the points you put into your EVs you will have to pay in 500 Poké Gold. Hint: If you aren't sure what the EV Yield is for a Pokémon the Pokédex tells you.
